LADIES! I need opinions for my upcoming wedding?

My wedding is on November 11th of this year (I said October in my last question.. it’s not in October, lol. AHH! Sorry, I’m so frazzled! Lol.) and I asked a question earlier about eternity bands, but I have been honestly freaking out over the ring exchange. My MOH (my little sister) is going to be holding the ring that I’m going to be giving my fiancee.
My fiancee is going to give me two eternity bands, and they have both been in our families.
One ring is from his side of the family, and the other ring is being made out of one of my grandmother’s ring.
Our ceremony isn’t religiously traditional – we’re both writing our own vows,
and we’re not having a priest marry us, we’re having someone who is
very special to us do it.
The wedding is going to be very homey, and comforting, we want everyone
to feel comfortable, yet it is still gorgeous and glamourous.
It’s outdoors, and the ceremony is going to be at sun set.
(just setting the mood)
but, I have no idea what to do with my engagement ring! I want to
leave my left ring finger bare for the wedding bands, my fiancee wants
to incoporate my grandmother, and his grandmother into the wedding.
Would it be weird if he had them hold the wedding bands, then give them to him
when they were needed? Then have his best man (his bestfriend) give him the engagement ring
to put on my finger? Ahhhhh, the little things of planning a wedding!
As you can probably tell, we’re not trying to stick
to tradition. We want a wedding that really reflects our personalities,
and we honestly have planned the perfect wedding together. We
want everything to be different, but simple.

And then my dress.. I’m wearing a stunning, jaw-dropping (words can’t even describe how much this dress means to me. It is definitley THE dress.) dress from the perla d collection by Pnina Tornai,
and it’s goregous, don’t get me wrong, but I don’t want to spend the
reception in it. I’m afraid of spilling something on it, and the dress was expensive, so I don’t want to ruin it! lol. http://i915.photobucket.com/albums/ac354/nxthingpersonal/Perla-D-12504-large.jpg This is basically it, except mine has a lot more beading. I couldn’t find the exact dress online, sorry! (obviously, that’s not me in the picture.. that’s a model from the Kleinfeld website! lol.)
I was thinking of getting another dress, still white, to change into? Any thoughts?

ONE MORE THING!
The cake.. I need to have my order in by friday (OMG, right?!) and
We chose a Red Velvet Cake, because we’re having a fall wedding,
and the red set the mood.. but all the frosting i’ve tasted on the
cake is gross :/
i’m not a huge fan of frosting, or fondant, or anything. I want to
have my cake made, and have the frosting inbetween the layers of the cake,
but not have them ice the outside of the cake? You know what I mean? I was thinking
of doing that, because 1) I’m not a huge fan of frosting.
2) It looks, to me, a lot more rustic
3) My wedding is homey, so I kind of want the cake to look
home-madeish.

(My little sister keeps saying it’s like Hilary Duff’s wedding cake? I honestly haven’t seen anything from her wedding, I’ve been planning mine since January.)

Sorry if this is all over the place, but my mother and my sisters (I have 4 older sisters who are all married w/ children and 1 younger sister who is 20, I’m 22 – my fiancee’s 29) have all been throwing their opinions all over the place, and they’re all so stubborn that they won’t take no for an answer, so I need some opinions. Like I said, I’m frazzled, and I’m anxious, and I’m excited. I never really thought about the little things that go into planning a wedding, but now that I have to think about it, I’m completely lost!
